African Peanut Stew/Soup, chicken recipes, and menu plan

Posted by on Oct 21, 2013 in Blog Posts |

I roasted these two ladies yesterday and have dinner planned for the rest of the week.  (Easy roasted chicken recipe.) This is a slightly more ambitious meal plan than usual. Chickens? Same time/same oven, the one on the left had crispier skin, and overcooked legs (I’m too lazy to truss properly.) I will use the chicken for the soup and enchilada casserole (making two, one for a friend.) I love the casseroles that have all the veggies in them (beans/onions for enchilada, and...

organic but eating Fritos vs. spoiled snacks: my verdict? “should” ruins eating…

My husband recently sent me a link to this Podcast, with “Judge” John Hodgman and guest Alton Brown, who help a couple decide who is right or wrong around eating decaying food and more. It’s worth a listen, and if you don’t want any “spoliers” (haha) stop reading, listen to the podcast and come back. I was so blown away by this comment on a recent blog post that I decided to make sure it didn’t get lost. It is a must read as far as I am concerned, in terms of teaching yourself to cook, and taking care of yourself… My only complaint is that I would disagree that this reader says her cooking skills are nothing special! I repost with permission, and gratitude as I head off to the Mall of America for some Spring Break fun before a few hours work this afternoon! (M has been begging...

when “new and improved” is anything but, and tricky packaging

Usually when a food company “improves” on something, I’m not impressed. I liked my less crunchy, less “tasty” TLC crackers. I can’t stand the new ones. When I told Hubby I didn’t like them, he tried one (he too hates wasting food) and said, “Well, these are just stale.” Alas, I had just opened them. Sigh. So long TLC crackers. Or Raisin Bran “Crunch…” (At least I can still get the original, but once I brought home the...

Koala Kupcakes

Posted by on Oct 25, 2012 in Blog Posts | 4 comments

Sometimes I get tired of being sick and tired. Annoyed with poorly designed studies, bullying, and kids who are put on diets or are forced to eat. So, for something completely different and fun (I do that kind of thing too, though maybe need to more often) I thought I’d share my recent culinary adventures in birthday cupcake decorating! Enjoy!   M is totally obsessed with Koalas. It could be worse. So, there was a koala-themed party. I decided to make koala cupcakes. Here is what I...
